Guys.
We live in an upstairs apartment with no AC.
Its like, I finally know what Nelly was talking about all those years ago…
Do what you gotta do, Nelly baby! I feel you so hard right now.
My dog has found herself a cool spot that gets nice circulation from our ceiling fan, meanwhile my husband and I are just sitting over here like:
When it gets this hot, there is only ONE SOLUTION.
Here’s what you’ll need:
1/2 c vanilla yogurt* (Greek yogurt is okay too)
1 tsp vanilla extract
1/4 c funfetti cake mix
1-2 tsp sprinkles (optional)
*If you only have plain yogurt, add vanilla extract and confectioner’s sugar in small amounts while tasting as you go until you achieve a nice vanilla yogurt flavor. I ended up needing 4 teaspoons of vanilla extract and 3 tablespoons of confectioner’s sugar for 1/2 cup of plain Greek yogurt.
Here’s what you’ll do:
1. (Mix your vanilla yogurt together if needed.) Combine all the ingredients in a freezer-safe bowl with a lid and mix well.
2. Place the blended mixture in the freezer (lid on) until frozen. I waited about an hour and a half.
It could’ve gotten more frozen, but its hot and I have needs, so…
Until next time, cheers!
Semi-frozen yogurt and ice cream is where it’s at anyway! It’s meant to be even hotter today – ugh! – so I may end up making a batch of this today. Stay cool, friend!
